A Little Somethin' For Your Weekend

Happy Friday!
Do you have fun plans for the weekend?



I bought a few cans of pumpkin last weekend, but they only had huge cans.
I made these cookies and they were delicious.
But I still had 3/4 of a can left.
So I searched and came across a yummy pumpkin muffin recipe
and thought you might want to surprise your family with a new morning treat.

So, here's the recipe:

Pumpkin Chocolate Chip Muffins

3/4 cup white sugar                    1/2 teasp. Baking soda
1/4 cup vegetable oil                  1/4 teasp.ground cloves
2 eggs                                          1/2 teasp. ground cinnamon
3/4 cup canned pumpkin            1/4 teasp. salt
1/4 cup water                              1/4 teasp. ground nutmeg
1 1/2 cups flour                          1/2 cup chocolate chips (or less . . . or more) 
3/4 teasp. baking powder

1.  Preheat oven to 400 degrees.   Prep your muffin tins with wrappers or grease and flour.
2.  Mix sugar, oil and eggs.  Add pumpkin and water.  In separate bowl mix together the dry ingredients.       Add wet mixture to the dry and add chocolate chips. 
3. Fill muffin cups 2/3 full and bake for 20-25 minutes.

*** I like to add a tiny bit of white sugar to the top of each muffin before baking- it gives it a little crunch

***I used less than a 1/2 cup of chocolate chips and it was plenty sweet


The girls and I decided they taste even yummier 
with fun fall muffin wrappers.
